Welcome to acetaia Caselli. With us, the passion for traditional balsamic vinegar of modena is a family tradition which has been passed down from father to son. It has marked the history of our family for decade, giving us endless satisfaction. The cooked must is taken from the Mother casks and transferred to the largest barrels in banks formed by barrels made from different types of wood, gradually scaled down in size. Fermentation takes place in these barrels, whiles the central ones are used maturing and the smallest for ageing.
