A few kilometers from Modena in the vicinity of Maranello, the birthplace of Ferrari, lies the small, richly traditional village of Spilamberto with its ancient castle, lovingly preserving one of the secrets of Emilia Romagna’s gourmet tradition, Traditional Balsamic Vinegar of Modena, which food lovers refer to as the region’s “black gold.”

Three generations ago, in the lee of the castle, the family jealously guarded their priceless inheritance in the farmhouse attic; this all changed when Grandfather Piretto chose to share his gift with others. The Acetaia Caselli plant was born out of simple and authentic ingredients and the spirit of local tradition in the land of Traditional Balsamic Vinegar of Modena.

From that time on, we have continued to sell and export our love of fine vinegar, personally overseeing and following every step of a production process that is carried out “in house” from beginning to end: caring for the vineyards, harvesting the grapes, working the must and carefully replenishing the barrels. To preserve the venerable values of our predecessors, we have opted for exclusively organic farming methods, embracing the natural development of our grapes and entrusting the results to the innate generosity of the land.
