Genuine traditional balsamic vinegar is produced in an area formerly belonging to the Estensi family. It is made with cooked grape must, matured in a slow vinegarization process produced by natural fermentation and gradual concentration achieved through lengthy periods of aging in sets of barrels made from different woods, without the addition of any flavorings. This vinegar has a deep brown color, intense and glossy, with a dense consistency that is syrupy yet fluid. Its aroma is sharp, distinctive and complex, with a strong yet pleasant and harmonious degree of acidity. With its traditional and unmistakable balance of sweet-and-sour flavors, it is distinguished by a generous character enlivened by delicate subtleties that exist in perfect agreement with its olfactory features”. 

This is the definition offered by the Consorteria Spilambertese, an association that works to promote and valorize Traditional Balsamic Vinegar of Modena.

An association safeguarding tradition 

The 1999 cask that won the Acetaia Caselli vinegar producers the SuperPalio prize for excellence in Traditional Balsamic Vinegar of Modena for the consortium’s first 30 years. The Extravecchio by Acetaia Caselli, the outstanding product that earned us the honor of receiving the SuperPalio in 1999.

Established in 1967 under the name "Consorteria dell'Aceto Balsamico Naturale"  an association that works to promote and valorize Traditional Balsamic Vinegar of Modena.  

Moreover, the consortium seeks to promote Traditional Balsamic Vinegar of Modena through training courses and educational activities, programming at the Museo del Balsamico and special events. One of these is its yearly Palio di San Giovanni (St. John, the patron saint of Spilamberto) competition to judge the best “samples of Aceto Balsamico Tradizionale produced in the area of the former Estensi family estates.”

On occasions of particular importance for the consortium, a special edition of this competition is held in which the winners of the Palio di San Giovanni are invited to compete against each other; the winning cask is awarded with the “SuperPalio” label to attest to its being the ‘best of the best.’

1990 - Rolando Simonini Superpalio (founder of the association)
1986 - Ventennale Superpalio (twenty-year anniversary of the foundation of the Consorteria)
1999 - Trentennale Superpalio (thirty-year anniversary, in which we had the honor of winning)
2006 - Quarantennale Superpalio (forty-year anniversary)
